Holiday Business Hours

Fuji Bakery will be closed from Sunday, December 25th through Sunday, January 8th for the holidays. Thank you for your patronage this year, and we welcome you back to our Seattle and Bellevue locations for some freshly baked bread on Monday, January 9th. Happy New Year!

As of November 7th, we will no longer be serving cakes at our Bellevue location. We apologize to our customers who will miss the Bellevue dessert case! We will still be offering breads and pastries at both Bellevue and Seattle, so please drop by to try some of our new fall offerings.

Thanks to your efforts, Fuji Bakery was able to raise over $1900 for earthquake and tsunami relief efforts! This figure includes 5% of all sales from Monday, March 14th to Saturday, March 19th as well as over $650 in customer donations, which we matched to provide an additional $650. Donation proceeds will be given to Seattle Japan Relief, a collaboration of Japanese American and Japan–related cultural, educational, and civic organizations standing together to promote relief and recovery following the devastating earthquakes and tsunamis in Japan. Thank you for collaborating with us to support immediate and long-term relief efforts.

Featured Item

The item we are currently featuring is our homemade levain. Made with homemade natural yeast cultivated from rye flour, levain has a slightly sour taste and dense, chewy texture that results from fermenting the dough at low temperatures for a prolonged time. Because the entire baking process takes two days to complete, levain is not available on Monday (the first day we are open each week) but is on sale Tuesday through Saturday after 12:30 p.m. in Bellevue and after 1:30 p.m. in Seattle. For a taste of levain fresh out of the oven, drop by our Bellevue location in the afternoon and try a sample (or five!) of levain with olive oil & balsamic sauce or our chef's homemade anchovy butter. Above all, bite into some levain and enjoy the pleasant aroma of rye wheat!
